The soil provides our wines with mineralty, which makes them unique and one of a kind. They also provide freshness and length in the mouth.

The Hondarrabi Zuri variety, in this climate and this soil, denotes elegant, fresh and fruity. As a result, we have long-lasting wines, full of nuances and inmortal.

We seize the latest technological advances in the oenology field, but we work in an artisanal way, with minimal intervention and without using factors that are external to the grape. Logical oenology.

These points are the ones that determine the personality and character of the premium wines.

Land and biodiversity

The soil of our land is a granite soil with slaty schists. Gray and very eroded schists with a medium organic content. These soils indicate the varietal notes of the grapes and provide mineral and elegant notes.

Within our viticulture objectives there is maintaining the soil alive and structured in order to encourage flora and fauna biodiversity and making our land sustainable, being nature itself the one that nurtures us.

In order to achieve that, we let a spontaneous vegetal cover between the vineyard’s rows, creating a well-balanced and alive ecosystem. Apart from fertilizing naturally, it helps us control the vigour of our vineyard and to avoid the land’s erosion.

Our fertilizers are made naturally with sheep manure. Every year in pre-pruning and pruning time, we use sheep from the farms nearby to weed and to provide the land with nutrients.

In the pruning time, we add shoots to the soil so the plants can nourish from their own matter.

The leftovers from the wine harvest always go back to their cycle, the land that surrounds them, in order to create a sustainable viticulture and make our wines environmentally friendly.

Climate and microclimate

In order to express a unique character and to maintain the vineyard healthy we need to work them by hand, that’s why we visit each vine constantly in order to keep them healthy, nourished and airy.

Viticulture

Perhaps viticulture is the most important aspect in order to elaborate wines with life and soul. Our whites are exclusively elaborated with our own grapes, located around our winery in different plots, which allows us to control the quality of the raw material at the highest level.

During the whole year the vines and the landscape are been taken good care of in order to guarantee excellent harvests. In winter, the vines are trimmed in order to limit the load and make easier the operations that are required. At the same time, the shoots are delicately tied and the excessive ones are trimmed to minimize disease, control the load and improve the airing. In summer the covers are constantly reaped so the air can flow between rows and before the grape harvest we strip the leaves off the bunch for a better insolation and ripening of the skin.

Variety

Forest

Just like we care about the forest that surrounds us, we also try to protect the fauna that lives there, such as roe deers, squirrels, hedgehogs, vultures, bats, eagles… During summer the vineyards serves as a shelter for local birds and in November also for migratory birds.
