5 months on its lees in stainless steel tanks at controlled temperature.

100% Hondarrabi Zuri.
Climate 2011:
The 2011 vintage was characterized by a cold, dry winter followed by a wet spring that provided a great deal of vegetation. The rainy, warm summer advanced the maturation of the grapes to the point that by mid-September was exceptional.
Vineyard:
15 hectares of 100% Hondarribi-Zuri grape varietal planted on trellis framework at some 300m. above sea level
Winemaking:
Manual selection of the grapes, a cold pre-fermentation maceration period, and then fermentation in small stainless steel tanks with selected yeasts.
